Mashed Sweet Potatoes

Anyone else a sweet potato fanatic? I’ll take them any way, but a creamy mash is always a great way to switch it up. Here is my very simple and clean recipe for mashed sweet potatoes. Perfect for an easy dinner side or even meal prep. This recipe yields about 4 meals.

What you’ll need:

  • 3 medium sweet potatoes
  • 2/3 cup coconut milk
  • 1 tbs coconut oil
  • 1 tsp parsley
  • 1 tsp cinnamon
  • Pinch of sea salt
  • Black pepper (to taste)

To make:

  1. First peel and cut sweet potatoes into cubes. Place the cubes into a small pot and boil uncovered (medium-high) for about 15 minutes. You should be able to slice cubes with a fork when finished. Avoid overcooking them, too mushy is not good!
  2. Drain water from pot and place cooked sweet potato in a large mixing bowl. With a hand mixer powered off, begin to mash the cubes before powering on.
  3. Add all spices, coconut oil, and only part of the coconut milk. Blend well on high.
  4. With mixer off, scrape sides of bowl and add the remaining coconut milk. Continue to mix on high speed until smooth and creamy.

*A blender is a great tool for these as well. If I’m making more than 3 sweet potatoes at a time I will use my Vitamix. When making a smaller amount I use a hand mixer.

**A great addition to this recipe is 1tbs maple syrup. But when making these for just myself I leave out any added sweetners!
